Lemon Brownies

Ingredients

  • 1 1/4c sugar
  • zest 2 lemons
  • 12T melted butter
  • 1T oil
  • 2 eggs
  • 1tsp vanilla
  • 2T Lemon Juice
  • 1 1/4c flour
  • 1/2tsp salt
  • 1/2 tsp baking powder
Frosting
  • 1 1/2c powdered sugar
  • 1T heavy cream
  • 2T lemon Juice

Instructions

  1. Preheat oven to 350deg
  2. use your hands to blend sugar and lemon zest together in a large bowl. It should feel like wet sand.
  3. Add in butter, eggs, oil, vanilla, and lemon juice and whisk well.
  4. In separate bowl combine flour, salt and baking powder.
  5. Add dry ingredients to wet and combine.
  6. Grease 8x8 baking dish and place batter in. Bake in 350deg oven for 20 minutes until just set.
  7. Allow to fully cool then whisk frosting ingredients together and pour over brownies.
