Summer Couscous Salad
Yield: 6-8
Ingredients
Salad
- 1c Couscous
- 1/2 English cucumber, diced
- 1/2c cherry tomatoes, thinly sliced
- 1/4c red onion, thinly sliced
- 1/2c black beans, rinsed and drained
- 1/2c corn kernels
- 1/4c crumbles feta
- 1/4c chopped cilantro
Dressing
- 1/4c Olive Oil
- 2 tbsp lime juice
- 1tsp Dijon
- 1tsp honey
- 1tsp fresh minced garlic
- 1/2 tsp cumin
- 1/2 tsp salt
- 1/4 tsp pepper
Instructions
Couscous
- Bring 1c water or stock to boil. Add couscous, stir, cover and remove from heat. Allow to sit for 5 minutes them uncover and fluff with fork.
- Add remainder of ingredients and toss together. Adjust seasoning as needed.
Dressing
- Combine all ingredients in bowl or mason jar. Mix to emulsify. Pour over warm couscous to allow it to absorb.
