Best Ever Cinnamon Coffee Cake
This is my all time favorite coffee cake recipe. I came across this dish from a former patient of mine who used to bring this to my clinic as a treat for us around the holidays. We were all obsessed with this dish, and my patient was gracious enough to share the recipe with me. It has now become my family staple and one my husband asks for frequently. This cake is moist, tender, and so easy to throw together. It is a semi-homemade coffee cake, using boxed cake mix and pudding mix as the batter. I promise this will become a new family favorite of yours! My kids and hubby literally just devoured it all after I finished shooting it! Enjoy!
Best Ever Cinnamon Coffee Cake

This is my favorite cinnamon coffee cake. Moist, tender, and so simple to put together. I absolutely love the streusel topping, and an easy glaze just makes it look that much more delish!
Ingredients
Coffee Cake
- 1 box yellow cake mix
- 1 small box vanilla instant pudding
- 4 large eggs
- 3/4 c water
- 3/4 c vegetable oil
- 2 tsp vanilla
Cinnamon Sugar Filling
- 3/4 c granulated sugar
- 1/4 c brown sugar
- 2 tsp cinnamon
Cinnamon Streusel Topping
- 8 T butter, melted
- 1 1/2 c flour
- 1/2 c brown sugar
- 1/4 c granulated sugar
- 1 1/2 T cinnamon
- 1/2 tsp salt
Glaze
- 1 c powdered sugar
- 2-3 T half and half
Instructions
Prepare coffee cake
- Preheat oven to 375 deg F
- In mixer or large mixing bowl combine all ingredients for coffee cake. Beat well for 3 minutes until mixture is smooth and lightens in color.
- In small bowl mix together cinnamon sugar.
- Grease a 9x13 baking dish. Add half of batter to dish. Sprinkle with cinnamon sugar, then top with remaining batter.
- In separate bowl combine all ingredients for streusel topping and mix with fork until it resembles wet sand.
- Sprinkle over top of coffee cake in an even layer.
- Bake in oven for about 45 minutes or until toothpick comes out clean.
Glaze
- Whisk together powdered sugar and half and half until desired consistency. Add more half and half if too thick.
- Drizzle over coffee cake and serve!
