Chocolate Covered Dates
Dark Chocolate Covered Dates
These are a perfect healthy but indulgent party food or snack. I love these for Super Bowl parties, especially when we are still trying to keep things a little more on the healthy side at the start of the year. These taste fantastic. I honestly think they resemble a peanut butter and jelly sandwich....but covered in dark chocolate!
Ingredients
- 16 Dates, pits removed
- Creamy peanut butter
- 8oz dark chocolate, chopped
- 1T coconut oil
Instructions
- Fill the inside of the dates with peanut butter.
- Place dates on parchment paper and put in fridge or freezer to firm up for 20 minutes.
- While dates are chilling place dark chocolate and coconut oil into microwave safe bowl. Microwave for 30 seconds at a time stirring in between until melted and smooth.
- Take dates out of fridge. Using a fork dip into melted chocolate. Allow excess chocolate to drip off then transfer back to parchment paper. Top with your choice of toppings. I like sea salt, coconut flakes, and cocoa nibs. Freeze dried fruit works great too!
- Place back in fridge for 30 minutes to firm up.
