Single Serve Dark Chocolate Chip Cookie

I love the idea of a single serve dessert. Sometimes you just want 1...or 2 cookies! This recipe is perfect for Valentine's Day coming up. Finish you date night dinner at home with 2 of these gooey, fudgey cookies. The perfect finish to a romantic evening!

Ingredients

  • 2T butter, softened
  • 1/4c brown sugar
  • 1 egg yolk
  • 1/2 tsp vanilla extract
  • 1 1/2T cocoa powder
  • 1/8 tsp baking soda
  • 1/4 tsp salt
  • 1/4c all purpose flour
  • 3T semi sweet chocolate chips

Instructions

  1. Preheat oven to 350deg
  2. In medium bowl combine butter and sugar together with whisk until smooth.
  3. Add egg yolk and vanilla and mix until combined.
  4. In separate bowl combine cocoa powder, baking soda, salt and flour together.
  5. Add flour to wet ingredients and fold in to combine.
  6. Finally adding chocolate chips
  7. Divide dough into to cookies and place on baking sheet. Bake at 350deg for 10-11 minutes until the outer edges of the cookies are JUST set.
